Cook the goose giblets and bones with root vegetables, onion, and wild spices. Strain the broth, remove the meat, and chop it together with the giblets.
Thicken the strained broth with a light roux and simmer for about 40 minutes.
Finally, season with lemon juice, salt, cayenne pepper, nutmeg, and add cream.

Liver dumplings:

Grind the goose liver, then add breadcrumbs, eggs, grated garlic, soft butter, salt, and pepper. Mix these ingredients to form a thinner dough, and let it rest in the fridge for 30 minutes. Afterward, shape the dough into dumplings and cook them in poultry broth.

Homemade egg noodles:

From eggs and all-purpose flour, to which we add salt, we make a firm dough, which we roll out into thin sheets and let dry. Once dried, we cut the sheets into small strips and cook them in poultry broth. After cooking, let the noodles cool on a tray and lightly coat them with oil.

To finish the soup:
Place the warmed dumplings, noodles, and meat with the giblets into a warm deep plate. Pour the hot broth over everything and garnish with freshly chopped parsley.
